Shrimp Bowl with Bang Bang Sauce

Lately I’ve been seeing recipes for bang bang shrimp all over Pinterest.  With such a funny name I had to check it out!  After a little research I learned that bang bang shrimp is a super popular appetizer that you can order at Bonefish Grill.  I’ve never been there before but with so many rave reviews and copy cat recipes out there I had to give this one a try!  Usually the shrimp is just served on a bed of lettuce because it’s an appetizer and the shrimp is also deep-fried before it’s covered in the sauce.  I decided to turn the dish into an entrée so it could stand alone as a substantial meal.  I must say it was one of my better ideas 🙂

I can’t really call the dish bang bang shrimp since it’s got a lot more ingredients so I decided to go with “shrimp bowl with bang bang sauce.” It’s pretty fitting if you ask me!  It’s a lot like an asian stir fry but with a much better sauce than just soy sauce.

Here’s what you’ll need (2-3 servings)

about 20 small shrimp (fresh or frozen) shelled and deveined

1 cup quick cooking brown rice (uncooked)

1 head broccoli

1 red or orange bell pepper

4 cups edamame (frozen)

2 tbs olive oil

Bang Bang Sauce

3 tbs mayonnaise (light is fine)

2 tbs plain greek yogurt

2 tbs Thai sweet chili sauce

1 tsp siracha (it’s super spicy so taste before you add more!)

Ok, you’re going to have a lot of things cooking on the stove at once but each individual thing is easy to cook so don’t feel overwhelmed! Sipping on a glass of wine while I cook usually helps 😉 First, get the rice going.  Cook it according to the package directions, usually about 5-10 minutes.  Next, chop up the bell pepper into thin strips and chop up the broccoli.  Heat a skillet over medium heat with a tbs of olive oil and let the veggies cook until tender.

Once those are cooking put on a pot of water to boil to cook the frozen edamame.  When it’s boiling add the frozen edamame and reduce the heat to a simmer for about 5 minutes.

Then start on the bang bang sauce.  Just add all of the sauce ingredients together and stir.

Finally, cook the shrimp.  Heat a skillet over medium heat and add 1 tbs of olive oil when the pan is hot.  Add the shrimp and cook for about 2-3 min on each side.  As soon as the shrimp is pink and no longer translucent it’s done! Make sure to watch it really well because overcooked shrimp = rubbery shrimp.  Eww…trust me.

When the shrimp is cooked turn off the heat and add the sauce to the skillet.  The skillet will be warm enough to heat the sauce through.

Now you’re ready to assemble your bowl.  Start with some rice, then add the veggies and top it with the deliciously saucy shrimp.  SO GOOD!

The sauce was totally different than anything I would have ever thought to make but it was sweet and creamy with just a little kick to it.  I wonder what else you could put it on?
